Instructions:

  3. Combine Sooji and Milk: Once the sooji reaches the desired color, gradually add the warm milk mixture. Be cautious as the mixture might splutter. Stir continuously to prevent lumps from forming.
  4. Simmer and Sweeten: Reduce the heat to low and simmer the mixture for 5-7 minutes, or until the milk is absorbed by the sooji. Add the sugar and stir well until it dissolves completely.
  5. Flavor and Texture: Now comes the moment of customization! Add the cardamom powder for a warm, aromatic touch. For a richer taste, consider adding a pinch of ground nutmeg or a few chopped pistachios. The consistency of suji halwa should be thick and slightly loose, not dry or sticky. If needed, adjust the water content by adding a tablespoon at a time until you achieve the perfect texture.
